Shallot plants, also called “multiplier onions”, are another member of the Allium genus, along with onions, garlic, and leeks. Shallots originated in parts of Asia and they were eventually distributed to other continents for their culinary quality and versatility. Shallots are similar to onions in appearance, although they are comparatively smaller in size. Uses for shallots, or “gourmet onions”, include sautées and salads, roasting, and pickling. They are often substituted for onions in recipes for their rich, full flavor. Shallot plants thrive in rich, well-drained soil and tend to grow in clusters. Each bulb yields approximately 3-4 shallots. Plant in spring and shallots are ready for harvest that summer, after their leaves wither.
