Rhubarb plants (Rheum rhabarbarum) are perennial vegetables that are often considered and treated as fruits. Rhubarb’s edible stalks (the only safely edible part of the rhubarb plant) are reddish, but sometimes green, and are similar in appearance to celery. When eaten raw, rhubarb is crisp and juicy with a tangy, zesty flavor. It is revered as a dessert when combined with sugar or strawberries and baked into delectable rhubarb pie. Rhubarb is also enjoyed in breads, cakes, salads, sauces, and wine. Rhubarb plants are easy to grow as long as the soil is well-drained and full of organic matter and nutrients.
