The Aztec Fuji® is definitely a dessert apple. Thin-skinned, with a firm, crisp texture, the apples are large in size and deliver a sweet flavor and low acidity. Perfect for baking apple pie!
Aztec Fuji® are fast producing and have a notably long shelf-life, making it an easy choice for homesteaders and farmers. It originates from a random seedling selection of a Fuji variety in New Zealand and was developed for its vigor and great taste. This apple tree is early blooming and late-ripening and requires a pollinator nearby.

Yes, a Stark Jon-A-Red apple tree will pollinate an Aztec Fuji apple tree, as long as their bloom times overlap.
Why They Are Compatible:
Both Are Different Varieties – Apple trees require cross-pollination from a genetically different variety. Stark Jon-A-Red (a sport of Jonathan) and Aztec Fuji meet this requirement.
Overlapping Bloom Times –
Stark Jon-A-Red is a mid-season bloomer.
Aztec Fuji is a mid-to-late season bloomer.
Their bloom periods overlap enough for effective cross-pollination.

These could work as they have an overlapping bloom time but it may be best to pick something else with the same mid season bloom time such as a Golden delicious. Jona red or Red delicious.
