Unfortunately, we don't offer a customizing option at this time. Your zone is a little tricky because most fruit trees (except citrus, olive and avocado) won't do well there. Most fruit trees require a certain number of days/hours below a certain temperature (chill hours) in order to go dormant and restart its production cycle. The tree will survive in your zone, but will not produce much, if any, fruit.
The apple trees included in this fruit tree assortment are great pollinators for one another. The website simply does not currently display the extensive list of compatible cross-pollinating varieties (there are a lot!). Don't forget, Orchards-in-a-Box at their core are specifically assembled to cover pollination needs.
Should be 8 - 10 foot tall. My dwarf plum is only starting in its third year, and yet it is already 8 foot tall (before this next winter pruning).
Thank you for your question. This coming fall, the collection will include four trees: Honeycrisp™, ‘Co-op 31’ WineCrisp™, CandyCrisp® and KinderKrisp. Right now, the collection is not available.

The only reason I did not give them a five star is because I have yet to see any fruit on them. Maybe I am just a horrible hobby tree farmer and I don't know what I am talking about, but I have yet to see any sign of any fruit on them... Makes me wonder...
