Its spears contain about 20% more natural sugar than green asparagus, giving them a noticeably sweeter, nuttier flavor that’s mild enough to eat fresh right out of the garden. The texture is incredibly tender — no tough, fibrous stalks here. Note that the purple color turns green when cooked, so enjoy them raw or lightly steamed to keep that beautiful color.
