Elephant Garlic (Allium ampeloprasum) is technically more closely related to leeks than to true garlic — and that botanical distinction explains its most distinctive quality: the enormous cloves with mild, gentle, slightly onion-tinged flavor that’s far less pungent than standard garlic varieties. Four to six massive, easy-to-peel cloves per bulb make it one of the most practical garlics to work with in the kitchen — no tedious small-clove peeling, just a few huge cloves that deliver garlic character without heat or sharpness.
