Fritters are breaded treats, often combined with fruit (like apples) and fried in oil. Variations on ancient apple fritter recipes have made their way through the centuries and into modern kitchens of apple fans around the world. Founded in 1904 as "Apple Week", October is now celebrated as National Apple Month! Apples are ripening by the bushel this time of year, so take pleasure in your apple harvest with Granny Stark's Grated Apple Fritters recipe:

Grated Apple Fritters Recipe

Preparation Time: 15 minutes Cooking Time: 2-3 minutes per batch Yield: 2-4 servings (12-16 fritters)

You Need:

  • 1 large apple (ex. Rome Beauty)
  • 2 large eggs
  • ½ cup pre-sifted all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • Margarine or vegetable oil for frying

Directions:

  1. Peel, core, and grate the apple into a medium-size bowl.
  2. Separate the eggs. Drop the whites into a large bowl, the yolks into a small one. Whisk the yolks until light and stir into the grated apple. Add the flour, baking powder, baking soda, and spices, and stir to combine.
  3. Beat the egg whites until stiff and fold into the apple mixture.
  4. Heat the margarine or vegetable oil in a hot skillet. There should be at least ¼ inch of cooking fat. Drop the batter by the heaping tablespoon into the hot fat. Cook for about 1 minute, turn, and cook the second side for the same length of time. The fritters should be golden brown. Drain on absorbent paper and serve immediately or keep warm in a low oven.
